Neil Prentice produces wine under both the Holly’s Garden and the Moondarra labels and is possibly one of the most enthusiastic producers I know, he really is the talent behind these wines. He bases his wine growing principles on low yielding vines that are managed with biodynamic principles to achieve the highest quality of fruit possible. He uses winemaking techniques that interest him and not those which are ‘safe’. He also passionately farms premium Wagyu cattle on his family farm in Gippsland.       

The Holly’s Garden Petillant is grown at 750 metres in the deep volcanic soils of the Whitlands high plateau, in Victoria’s North East. The Whitlands region is the coolest and the highest of Victoria’s wine regions and it pushes cool-climate viticulture almost to the limit. The grapes for Holly’s Garden are grown in the shelter of a small amphitheatre, that make it the warmest site in a very cool area.


The 2015 Holly’s Garden Rose Petillant is produced in the traditional Charmat method from Whitlands Pinot Noir, barrel fermented and aged on lees prior to transfer to bottle. It has classic cherry blossom aromas and rich yeast lees.

Brioche flavours are complemented by strawberry and maraschino cherry fruit finishing with tangy crunchy acidity.
